Squash is one of my all time favorite fall vegetables!  It's so sweet, tasty and comforting!  There are so many different ways you can prepare it too.  It can be sweet almost like a dessert or savory and be a meal in itself. Here are two of my favorites:

 This first recipe is a savory one and it's delicious!  Take your acorn squash and cut it in half.  Drizzle a little olive oil on the inside of the squash, place it cut size down on a baking sheet and bake for about 45 minutes until the flesh is soft and starts to carmelize.  Flip your squash and set it aside.  

While your squash is roasting, you want to get started on the filling.  This is something you can do any way you like.  Here's what I did and it was fabulous!  Start witha  little olive oil in a pan, add about half an onion, one clove of chopped garlic and saute until it begins to get soft.  Add about 1/2 pound of spicy turkey sausage and continue to cook until brown and crumbly.  Throw in about 4 cups chopped organic curly kale and cook until it begins to wilt.  Fill each side of your cooked squash with this filling.  It's ok if it's overflowing.  The more the better!  

In a small bowl, combine about 2-3 Tbs shredded parmesan, 2-3 Tbs panko bread crumbs and about 1/4 cup toasted walnuts.  Sprinkle on top of the filled squash and bake at about 425 for another 5 minutes until golden brown.  Amazing!
