Mediterranean Veggie Burgers

You may have guessed from previous posts that I have been on a quest for a great tasting, low carb veggie burger.  Well I finally figured it out!  These are packed with amazing flavors.  They are gluten free and taste great.  They actually hold together as a burger too!  I will be making them a lot in the future!  Personally I love them just plain, but some may think them a little dry.  If that's the case, serve them with an avocado cream sauce or just salsa and sliced fresh avocado.  Another great benefit, is that they are high in protein and not too high in carbohydrates, actually about othe perfect combination!  Let me know what you think.

Mediterranean veggie burgers

1 can navy beans

1 can chick peas

1/3 cup tahini

½ cup bread crumbs (I use gluten free corn flake crumbs)

1 egg

½ cup TVP (Texturized Vegetable protein)  adds protein and not the carbs or gluten

¼ cup chopped fresh cilantro

½ cup frozen spinach (thawed and wrung out)

½ cup green onions

2 Tbs fresh lemon juice

2 Tbs olive oil

2 garlic cloves, minced

1 tsp cumin

1 tsp coriander

½ cup roasted red peppers

½ cup feta

¼ cup chopped kalamata olives

Combine all ingredients down to roasted reds in a food processor.  Pulse to combine.  I like to leave a few chunks.  Fold in the rest of the ingredients.  Make into patties and bake at 400 for 20 minutes until golden.  Flip carefully and bake about 15-20 minutes more.  Serve with salsa and fresh avocado.
